MMmmmmm Marshmallows


I am self admittedly more of a coffee drinker than a hot chocolate girl. I enjoy hot chocolate after a day of sledding or being outside in the snow, but aside from that it is more of a once in awhile thing. Well after Klint made some homemade marshmallows I have had more than 2 cups of hot cocoa a DAY! Lol! They are THAT good!!

The recipe is from GeekBrief.TV- a show that gives homage and reviews all things techie and well...geeky! Surprisingly though we have gotten a lot of cool ideas and such from this show, like the review for the HexBugs that caught our eye. Who knew Geeks knew how to make the most awesome marshmallows possible?!

Here is the recipe- follow it religiously and you will never buy store made marshmallows again!!

Ingredients

1 cup powdered sugar
3.5 envelopes of unflavored gelatin
1/2 cup cold water
2 cups sugar
1/2 cup light corn syrup
1/2 cup hot water
1/4 teaspoon salt
2 egg whites
1 teaspoon vanilla

Instructions

  1. Oil a 9×13x2 pan, coat with powdered sugar.
  2. Put the cold water in a large bowl and sprinkle the gelatin over the water. Let it sit to the side while working with the other ingredients.
  3. Combine the sugar, corn syrup, hot water and salt in a saucepan. Put it on low heat and let it come to a boil, then pour the mixture over the gelatin and water mixture. Stir to dissolve the gelatin.
  4. Oil bottom and sides of a 13- by 9- by 2-inch rectangular metal baking pan and dust bottom and sides with some confectioners’ sugar.
  5. With a mixer, beat until it’s thick and almost tripled in volume. It’ll take 5-10 minutes.
  6. Clean the beaters, then beat the egg whites until they hold stiff peaks.
  7. Beat the egg whites and vanilla into the sugar mixture, only until it’s just combined.
  8. Pour into the pan, sift powdered sugar over the top. Put in the fridge for 3 hours to firm up.
  9. Run a knife or thin spatula around the edges to loosen the marshmallows, then turn it out onto the counter. It may take some loosening from the bottom as well.
  10. Use a knife or pizza cutter to cut into cubes (size is your choice). Sift the rest of the powdered sugar into a large bowl, and toss the marshmallows to coat them.
  11. Dig in! They’re great with a cup of hot chocolate. If you have a torch, torch the marshmallow on top of the hot chocoloate (or even coffee). They caramelize instead of burning like store bought marshmallows, and it’s awesome!
  12. *After they’re coated with powdered sugar, I’ve found that it’s best to keep them in the fridge for another few hours, otherwise the moisture tends to come out and the marshmallows don’t look as presentable. 

That is it! And the best part is that when they are mixed into hot chocolate they dissolve into this awesome fluffy sweetness that is nothing compared to the pitiful hard marshmallows that come from the store!

friends of ours just made some for new year's eve and sent us home 1/4 of a sheet. i think they're WAY better than store bought marshmallows :). yum!

omgosh - those sound delish! what a great gift they would be in a cute lil container w/ some hot cocoa mix!!
